Question by felisha: Chicken? I need new ways to make chicken for dinner any suggestions?
I have been making Parmesan chicken, fry battered chicken, chicken Alfredo, lemon chicken, and of course oven baked chicken, but i need some other ideas that are cheep, not a lot of ingredients, and very tasty, i use a lot of jiffy mix and always have it on hand.

  1. I like to get chicken breast or tenderloins, crush up some of your favorite potato chips. I like to use salt and pepper chips. Then dip the chicken in ranch dressing for kind of a binder then in the chips and bake in the oven. I can’t remember at what temp or for how long but if you cooked chicken in the oven before then you should know.

  3. For a cold dinner, I’ve made the following:
    Chicken – 2 cups cooked & chopped
    Colored rotini noodles (1 bag cooked)
    Black olives – 1/2 – 1 cup sliced (or chopped)
    Italian dressing – 1/4 to 1/2 cup
    Oregano, Italian seasoning, salt & pepper to taste.
    Optional: onions, tomatoes, green pepper.
    This is also good with spaghetti noodles as well.

  4. In a glass pan combine chicken with a can of veggies and gravy. Then mix up biscuits and put on top of chicken mix. Bake at 400 degree for 12-15minutes. Yummy.

    Cook up some fried rice and chicken. Add in scrambled egg, optional.

    Chicken and long grain and wild rice.

    Make chicken noodle soup with carrots, onions, and celery. Use chicken brooth.

  5. you can stew the chicken by browning it and cooking it covered with a little water. Add whatever you like. Do you have a can of tomatoes, or cream soup? ..or you can just use the drippings to make a gravy.

  6. Here’s a fabulous all purpose Chinese style marinade that works great on any kind of meat (beef, pork, chicken (esp. chicken wings), lamb). Side dishes: steamed rice & stir fried bok choy or Napa Cabbage.

    Chinese Marinade

    1 C. low sodium soy sauce
    1/2 tsp. sugar
    1/2 C. of chopped green onions
    4 garlic cloves minced finely
    1 tsp of toasted sesame oil

    NOTE: You can certainly increase or decrease the amount of this marinade or any of it’s ingredients to suit your taste. Also, the volume depends on how much meat you intend to marinate.

    Place your chicken (in this case) into a large ziploc bag. In a bowl, combine all of the ingredients and stir very well making sure the sugar has dissolved. Pour marinade over the chicken, press out all of the air as you seal it. Refrigerate and marinate for about 2 hours. About 30 min. before cooking, remove the chicken from the fridge to get closer to room temp. At this point you can cook it just about any way: bake, broil, grill or (this IS the best…deep fry…wow! If you make this marinade and apply it to deep fried chicken wings…you’d better make alot! Trust me on this one…they go fast.) .

  7. This is one of my favorite chicken dishes….and so easy to prepare:

    Crockpot Salsa Chicken and Rice
    Boneless, Skinless Chicken Breast – 1 Large Breast
    1 C Salsa
    1 1/2 c. Long Grain Brown Rice
    1 Can Fat Free, Reduced Sodium Chicken Broth
    Green pepper, as much as desired (I used 1/2 c.)
    Onion (optional)
    Put all except rice in a cockpot for 6-8 hours. Add rice and cook another 2-3 hours. Serve by itself or with refried beans. Makes 4-5 cups of rice/chicken mix. Can add more chicken breast if you want to go a little heavier on the chicken.
    Number of Servings: 4

  9. CHICKEN, BASIL, PARSLEY, AND TOMATOES

    * 1 tablespoon dried parsley, divided
    * 1 tablespoon dried basil, divided
    * 4 skinless, boneless chicken breast halves
    * 4 cloves garlic, thinly sliced
    * 1/2 teaspoon salt
    * 1/2 teaspoon crushed red pepper flakes
    * 2 tomatoes, sliced
    *
    DIRECTIONS
    1. Preheat oven to 350 degrees F (175 degrees C). Coat a 9×13 inch baking
    dish with cooking spray.

    2. Sprinkle 1 teaspoon parsley and 1 teaspoon basil evenly over the bottom
    of the baking dish. Arrange chicken breast halves in the dish, and sprinkle
    evenly with garlic slices. In a small bowl, mix the remaining 2 teaspoons
    parsley, remaining 2 teaspoons basil, salt, and red pepper; sprinkle over the
    chicken. Top with tomato slices.

    3. Bake covered in the preheated oven 25 minutes. Remove cover, and continue
    baking 15 minutes, or until chicken juices run clear.

    honey mustard chicken:
    – 1 cup honey
    – 2 tbsp mustard
    mix & pour or spread on chicken. bake for 2 hrs

    BBQ chicken:
    – 1 cup ketchup
    – 1 cup soy sauce
    – 1/2 cup honey
    – 1/4 cup oil
    mix & pour or spread on chicken. bake for 2 hrs

    apricot chicken:
    – 1/2 cup apricot jam
    – 1/4 cup oil
    – 1/4 cup honey
    mix & pour or spread on chicken. bake for 2 hrs

    lemon chicken:
    – 1 cup lemon juice
    – 1/2 cup oil
    – 1/2 cup honey
    mix & pour or spread on chicken. bake for 2 hrs

    breaded chicken:
    – 1 egg
    – 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)
    coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

    chicken noodle dish:
    – 1 onion
    – 2 cloves garlic
    – chicken cut into cubes or slices
    – 1 box of noodles (any shape & size you want)
    sautee onion, garlic, & chicken chunks in same pot until cooked. cook noodles in separate pot. strain noodles & put into pot with veggies & chicken. mix so noodles soak up all the flavors.

    Oregano is one of the quintessential herbs used in Greek recipes, and here it’s used, along with olive oil and lemon juice, in a marinade for broiled chicken thighs.
    Ingredients
    1 cup fresh lemon juice (about 5 lemons)
    2 tablespoons olive oil
    1 1/2 tablespoons minced garlic
    1/2 tablespoon dried oregano
    2 pounds skinless, boneless chicken thighs (about 8)
    Cooking spray
    1/4 teaspoon salt
    1/8 teaspoon black pepper

    Preparation
    Combine first 4 ingredients in a zip-top plastic bag; add chicken. Seal and marinate in refrigerator 3 hours or overnight, turning occasionally. Preheat oven to 350°. Remove chicken from bag; discard marinade. Place chicken in a single layer on a broiler pan coated with cooking spray; sprinkle with salt and pepper. Bake at 350° for 45 minutes or until chicken is done.

    Directions
    1.Spray a 10-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and cook for 10 minutes or until it’s well browned on both sides. Remove the chicken from the skillet.
    2.Stir the sauce and vinegar in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through.
    3.Serving Suggestion: Serve with orzo cooked in Swanson® Chicken Broth and sprinkled with Parmesan cheese and a green salad. For dessert, sandwich light vanilla frozen yogurt between oatmeal-raisin cookies.

    Ingredients:
    4 tbsp. butter (or margarine)
    4 skinless, boneless chicken breasts
    4 green onions, chopped
    1/2 lb. mushrooms, sliced (canned) or pieces
    1/2 c. Marsala wine
    1 c. heavy cream
    1 tsp. lemon juice
    Lightly salt & pepper
    Flour for breading chicken

    Directions:
    Dip chicken in water and bread with flour, salt and pepper. In large frying pan melt butter over medium heat. Add chicken and saute turning and cooking until fairly done. Remove and set aside. Add onions and mushrooms, cook until browned. Add Marsala and heavy cream. Bring to boil, stirring. Add lemon juice and salt and pepper to taste. Return chicken to sauce and cook until chicken is hot then serve over rice or fettucini or the like.
