  1. Chicken Gumbo

    3-4 lbs cut up chickens (I use all pieces)
    1 can chicken gumbo soup
    1/2 can ketchup
    1/2 can water
    1/2 cup margarine
    flour
    pepper
    garlic powder
    salt (optional)

    Dust chicken with flour and seasonings.
    In a large skillet brown chicken in margarine,tranfer chicken to a large pot.
    Pour soup over chicken.
    Mix ketchup& water,pour over chicken.
    Cover,bring to a simmer& simmer for 1 hour,or until chicken is tender.
    Stir a few times while cooking,to make sure chicken doesn’t scorch.

  2. 3 c chicken broth (mine is homemade, canned stuff is stronger)
    1 c cut up chicken
    1 c diced tomatoes (if you use canned tom’s, add juice; if fresh add sm can tomato sauce)
    1/3 c rice
    1/4 of a bell pepper, chopped
    1/4 of an onion, chopped
    1/2 c corn
    2 tsp dried basil (less if fresh)
    1/2 tsp pepper
    1/2 tsp garlic salt

    Make sure you use cooked chicken; put all ingredients in a pan, bring to boil, simmer until rice is done. Enjoy!

  3. * 1/4 cup oil for frying
    * 1/4 cup all-purpose flour
    * 1 green bell pepper, chopped (optional)
    * 1 onion, chopped
    * 2 cups cooked, chopped chicken breast meat
    * 1 (14.5 ounce) can diced tomatoes
    * 1 (4.5 ounce) can sliced mushrooms, drained
    * 2 tablespoons chopped fresh parsley
    * 2 teaspoons Worcestershire sauce
    * 3 cloves garlic, minced
    * 1 teaspoon soy sauce
    * 1 teaspoon white sugar
    * 1/2 teaspoon salt
    * 1/2 teaspoon ground black pepper
    * 3 dashes hot sauce

    1. Heat oil in a large skillet over high heat. Stir in flour and cook, stirring constantly, for 5 minutes or until mixture is the color of a copper penny. Reduce heat to low and stir in bell pepper and onion. Cook 10 to 15 minutes, or until tender, stirring occasionally.
    2. Add chicken, tomatoes , mushrooms, parsley, Worcestershire sauce, garlic, soy sauce, sugar, salt, pepper and hot sauce. Stir together, cover and simmer for 20 minutes.

    serves 4-5

  5. Classic Chicken Gumbo
    INGREDIENTS:

    * 2 tbsp Vegetable shortening
    * 2 tbsp Flour,all-purpose
    * 2 Onions,finely chopped
    * 1 Green bell pepper,fine chop
    * 5 cups Warm chicken broth
    * 8 Tomatoes,peeled/chopped
    * 1/2 lb Okra,cut into 1/4″ pieces
    * 1 1/2 tbsp File’ Gumbo
    * 1/2 cup Uncooked rice
    * 2 Ribs celery,chopped
    * 1 tsp Salt
    * 1/2 tsp Pepper
    * 1/4 tsp Thyme
    * 1 Bay leaf
    * 1 Broiler-fryer chicken,cookedPREPARATION:
    In large Dutch oven, melt shortening over low heat; add flour and cook, stirring, until brown, about 10 minutes (do not hurry; if flour burns, roux is ruined).

    Add onions and bell pepper; cook until onion is translucent, about 5 minutes. Slowly add warm broth; stir until broth reaches a boil.

    Add tomatoes, okra, rice, celery, salt, file’ gumbo, pepper, thyme and bay leaf; bring to a boil.

    Add chicken; when mixture boils again, reduce heat to low, cover and cook about 20 minutes.

    Stir and cook, covered, 20 minutes longer.
    Serves 6.
