  2. We’ve always canned our potatoes with the skins off. I imagine if you
    canned potatoes with the skins on it would probably make no difference. You
    bring up a good point in that I will try it with the skins on.

  6. How long the canned potatoes will last depends on several things. First is
    the temperature or storage conditions. The colder and darker the area you
    store them in the better. Second is the amount of light. The less light the
    potatoes are exposed to the better. We’re still eating last years potatoes
    with no problems. Long term I’m not sure how long they would store. I
    imagine around 1-2 years in the right conditions.

    potatoes and are they supposed to be peeled before packing them in the can?

  13. I hot packed a full canner of pint jars (19) with white potatoes last fall.
    This took a while for me to do. I noticed when finished the first jars were
    OK, but those I packed towards the end of the process had mush in the
    bottom of the jars. This had to be because the potatoes were in the water
    bath too long. Next time I’ll cold pack.

  14. Just make sure it is washed good…botulism can come from the dirt…that’s
    why they Peel carrots or any other root plant..

  17. Hello, I assumed you’ve canned potatoes before leaving the skin on. I
    haven’t canned any yet, but I saw someone stating that you must peel them
    because of the skin. I’d love to know you’re thoughts. Thank you for your

  23. I canned 50 pounds of potatoes a few years back. My hubby got them because
    Walmart refused them. There wasn’t anything wrong them so he bought them
    from another truck driver for me. Cheap! I am hoping to find some tires so
    I can try my hand at growing them again this year.
