Question by earwaxyness: Best potluck recipes without a lot of work?
I’ll be graduating from college soon. We’re planning on having a little backyard potluck/BBQ/lunch thing for 10-15 people max. I’ll also be moving the very next day. Current I live in the Southwest so the temperature on the day we have it will likely be over 100, maybe as high as 110.

I’m looking for easy, tasty, somewhat ok in the heat (will have a cooler or two obviously), not too time consuming foods to serve. Thank you.

  1. If it is going to be that warm, why don’t you just do ribs or chicken or burgers on the grill and serve cold salads with it. It almost sounds like it will be too hot to eat anything hot. Congratulations!

  3. This is absolutely wonderful, had it tonight for dinner.

    1 4 – 5 pound boneless pork roast
    1 large can cranberry sauce
    2 packages of Lipton onion soup mix

    In slow cooker put cranberry sauce and soup mix. Mash with a fork to blend. Place pork roast on top and spoon some of the mixture on top of the roast. Cook on high for 5 – 6 hours. Remove meat and cover with foil to keep warm. Mash together 2 tablespoons margarine with 2 tablespoons of flour. Stir into sauce and let thicken. Slice pork roast and return to slow cooker.

    I served buttered noodles with mine. You could also do this and put cooked, buttered noodles in another crock pot on low.

    Everyone will want the recipe.

  4. Garden Pasta Salad

    1 (16 ounce) package uncooked tri-color spiral pasta
    1/2 cup thinly sliced carrots
    2 stalks celery, chopped
    1/2 cup chopped green bell pepper
    1/2 cup cucumbers, peeled and thinly sliced
    2 large tomatoes, diced
    1/4 cup chopped onion
    2 (16 ounce) bottles Italian-style salad dressing
    1/2 cup grated Parmesan cheese

    Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.
    Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.
    Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.
    Chill for one hour before serving.

    Summer Sub Sandwiches

    3 (1 pound) loaves unsliced French bread
    3 (3 ounce) packages cream cheese, softened
    24 slices fully cooked ham
    18 slices provolone cheese
    3 (4 ounce) jars sliced mushrooms, drained
    4-1/2 cups shredded lettuce
    6 medium tomatoes, thinly sliced
    3 small onion, thinly sliced
    6 banana peppers, thinly sliced

    Cut the loaves of bread in half horizontally. Spread bottom halves with cream cheese; layer with ham, provolone and mushrooms. Replace tops. Cut loaf in half; wrap in paper towels. Microwave on high for 45-60 seconds. Remove top; add lettuce, tomatoes, onion and peppers. Replace top. Cut into serving-size pieces.
